70 g dried dates: soak in hot water for 30 mins and mash
1 mashed banana
1 grated apple
2 tbsp runny honey or maple syrup
200g rolled oats
75g chopped nuts
50g mixed seeds
Additional toppings: chopped pistachios, coconut flakes, chopped dried fruit (apricots, blueberries sultanas)
Method:
Preheat your oven to 190ºC (170ºC fan) and lightly grease and line a 20.5cm (8in) square tin with baking paper.
Mash the banana and dates together then add all the other ingredients and mix well.
Spread the mixture evenly in the prepared tin. Sprinkle your choice of optional toppings, pressing them gently into the mixture.
Bake for approximately 25 minutes until light golden brown.
Remove from the oven and when cool slice into pieces. Store in an airtight container.
