This one is always a crowd pleaser (even for my 80-year-old grandad) and packed full of flavour! Inspired by a Deliciously Ella recipe.
What you’ll need:
- 1 tin of chopped tomatoes
- 1 small carton of passata
- 2 tbsp of tomato puree
- 1 onion
- 1 red pepper
- 1 tin of black beans (or cannellini beans)
- 1 tin of kidney beans
- 3 cloves of garlic
- 1 tbsp of balsamic vinegar
- 1 tbsp of honey
- ½ a tsp of cumin
- ½ a tsp of paprika
- Pinch of black pepper
- Pinch of salt
- Pinch of chilli flakes
Step one
Chop and fry the onion, garlic and pepper in a pan for 5 minutes with the salt. Next add the tomato puree and spices for a further 5 minutes to release those flavours.
Step Two
Now add all the remaining ingredients to the pan and bring to the boil (sometimes it is at this point I sometimes put all the ingredients into the slow cooker for 4hrs on a high heat). Reduce the heat on the pan and leave to simmer for 30minutes.
Step Three
Now you're ready to plate up! I like to serve mine with some homemade guacamole, tortilla chips and rice or cous cous. It’s delicious and I like to add extra chilli flakes to give it that real kick. Enjoy!
